    The Discovery Menu has a particularly creative option for those who are prepared to let their creativity run wild. This experience throws away the script and is offered at the Galley seating, which consists of a dozen chairs facing the open kitchen. No predetermined order exists. Real-time inspiration, composition, and plating of each dish are determined by the chef’s current inspiration. It is similar to a live jazz performance in that no performance is repeated.     On a recent evening at Mystic, the speed of service reflected the tides in the adjacent harbor. One course was a delicate, yet bracing, gougère filled with foie gras mousse. Another cleverly referenced the maritime environment by serving dehydrated cod chips with seaweed aioli and sea asparagus. The aroma, texture, and memory of the Nova Scotian coast were all present in these first bites, which were not only striking but also evocative.

    A surprising dish called “Oyster-on-Oyster-on-Oyster” demonstrated the restaurant’s lighthearted assurance. The layered dish, which was served in a real oyster shell, featured briny caviar, a poached oyster, and smoked oyster aioli. The result was astounding—smooth, salty, and incredibly fulfilling. Under the direction of Malcolm Campbell, the culinary team prepared each dish with deliberate elegance, their subdued accuracy creating a cadence that the guests soon adopted.

    Mystic’s team showcases ingredients that feel both familiar and transformed by utilizing exceptional sourcing. An exceptional dish featured an egg yolk that was slow-cooked for several hours, resulting in a custard-like consistency that was atop brioche with wakame emulsion and garnished with Acadian caviar. This dish was as technically sound as it was emotionally, and it was served with a Jean-Marc Boillot Montagny 1er Cru. It evoked both admiration and nostalgia in equal measure, and it did more than just taste good.

    Sommelier Sam Melanson created the wine and cocktail pairings with a creative touch. The early seafood notes on the menu were perfectly complemented by the surprisingly complex Blanc de Noir from Avondale Sky Winery in Nova Scotia. The custom cocktail program, which cost $55, offered sophisticated flavors without sacrificing quality for guests who preferred non-alcoholic options. In fine dining, these offerings have greatly lessened the gap between drinkers and non-drinkers.

    Just as much credit should be given to Mystic’s design as to its cuisine. Soft Scandinavian colors and Italian furnishings adorn the room, which also features a ceiling that curved like a ship’s hull. The ethereal dining experience is grounded in the beauty of nature thanks to three glass walls that blend into Halifax’s harbor. Taste can take center stage because the three senses—smell, sight, and sound—are purposefully balanced.

    Mystic creates a sense of arrival through deliberate interior design decisions. The room is silent as diners arrive, not out of formality but out of pure amazement. There is hardly a whisper in the open kitchen. Employees move with silent resolve. A final treat that feels both classic and adventurous is provided by the cheese cart, which rolls slowly through the dining area.

    The influence of Mystic extends well beyond its culinary achievements. Its popularity in recent years has changed the definition of fine dining in smaller cities. By drawing comparisons to eateries in Paris, Tokyo, and San Francisco, Mystic makes a very strong point: urban sprawl is not necessary for innovation.
